These Paleo Onion Rings are crunchy, salty, and all around perfect!

I’ve been craving something crunchy and fried. It hardly ever happens but I just wanted that salty crunch of something that usually doesn’t make its way into the Paleo diet. These Paleo onion rings are so good, perfectly crunchy, salty, spicy, and just a hint of sweetness.

Did you know that coconut oil is great for frying? It has a very high smoking temperature which makes it the perfect oil to use for these. Just a half cup and you’re good to go. The coconut lends the perfect amount of sweetness to the onions which complements well with the heat from the cayenne pepper. You could also use refined coconut oil (still organic!) so that you wouldn’t have any coconut flavor at all. I hope you enjoy!

  • 1 large White onion
  • 1 cup blanched almond flour
  • 3/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup coconut oil

  1. In a small bowl whisk the egg with 1 tablespoon of water.

  2. In another shallow dish combine the almond flour with the cayenne, garlic salt, and cracked pepper.

  3. Slice the onion into 1/2 inch rings and separate into individual rings.

  4. Heat coconut oil over medium high heat in a medium saucepan (you want the oil about a 1/2 inch deep). You can test your oil by dropping a pinch of almond flour into the oil. If it immediately bubbles you're good to go.

  5. Dip the rings into the egg letting the excess fall off before dredging in the almond flour.

  6. Working in batches fry the rings for 1-3 minutes or until they are golden brown on both sides. You may need to flip halfway through if your oil doesn't quite cover the rings.

  7. Drain on a paper towel and try not to eat them all before you're done!

    very good, next time going to use avocado oil and far less salt, rings had a bit too much coconut flavor from the oil. I used almond flour fine ground and it stuck just fine to the rings as long as not handled much after cooking.

    I couldn’t get the batter to stick on the onion rings, even after dredging in the egg and coconut flour twice. I added about 2 T of arrowroot to the coconut flour and the batter stuck!

    Hi Lauren – I made these last night and the flavor was incredible! But, I had a hard time with the almond flour sticking to the onions, any suggestions? This is a definite repeat, but I know I can get a little closer to your output 😉

      Hi Leane! I’m so glad you loved the taste! Did your breading fall off before dropping them in the oil or after? If after I would try increasing your temperature a bit. If before I might try dipping them in egg then breading then egg and breading again. Maybe the double breading will help it adhere. If you try them again let me know how that turns out!
