Protein fluff is a high protein dessert made with protein powder, xantham gum, and then a fruit or other flavor of your choice! I chose strawberry for my first attempt at protein fluff, and the result was delicious!

I’m intentionally trying to eat over 100 grams of protein per day. In addition to the high protein foods I normally eat, I’ve been trying to get creative.

When I knew I could get 27 grams of protein by making protein fluff, I’ve been pinning a lot of variations of this recipe on Pinterest. This weekend, I finally got around to testing it!

What is protein fluff?

Protein fluff is a very thick and creamy, pudding like high protein dessert. The Xantham gum in the recipe really thickens it up so your protein powder goes beyond a drink, and turns it into a moussey, fluffy, pudding.

It’s a great substitute for protein shakes, when you just can’t drink one more shake! I prefer eating my calories to drinking anyway. It seems much more satisfying.

How to make protein fluff

There are many variations of protein fluff that I’ve been pinning. I’ve seen protein fluff in chocolate, cookies and cream, peanut butter, and all sorts of fruit flavors. I chose to start with strawberries, because they have so much flavor, and they are in season right now.

There are only three steps to making the protein fluff:

  • Blend your fruit (strawberries) and 1/2 cup of liquid in a blender or food processor. I chose almond milk to reduce calories.
  • Then, add your protein powder. I did have strawberry flavored protein powder, but vanilla protein powder would work as well.
  • Then add your Xantham gum and blend until it’s super thick and creamy. You can find Xantham gum in the baking aisle or on Amazon. You only need a teaspoon, so one bag will last a long time.

Tips for making this treat

If your protein fluff is not becoming light and marshmallowy, you could try casein protein powder. Casein powder is preferable for creating greater volume over whey protein powder. The Casein seems to get creamier and thicker quickly.

Second tip is to eat it cold! The colder the better. After your fluff has been fluffed, chill it until you are ready to eat.

Third tip is to add whipped cream! Whipped cream is low calorie if you can stick to 1-2 tablespoons and stop!

Basic strawberry protein fluff recipe

The ingredients I included in today’s protein fluff was:

  • 200 grams strawberries
  • 1/2 cup almond milk (or skim milk)
  • 1 scoop protein powder (I used strawberry flavor, but vanilla would work)
  • 1 teaspoon Xantham gum!

This makes a LOT of fluff because the volume just keeps growing. I would for sure share this or split it into two meals.

I’ve been trying a low of protein powder recipes. I love that you can get 20-25 grams of protein, from one scoop. But, I also don’t really care for protein shakes. I have tried the cookies and cream protein fluff, but I wasn’t able to get that to work yet. I’m still tweaking my recipe for that. In the mean time, I’ll enjoy this strawberry protein fluff!

I added a little bit of crumbled graham crackers to the top of my strawberry fluff, and I could honestly trick myself into believing it was a little strawberry cheesecake!
